   • 3-501.15(A)Cooling Methods - Methods — --Observation: Cooling shall be accomplished by using shallow pans, separating food into smaller or thinner portions, using rapid cooling equipment, stirring the food in a container placed in an ice bath, adding ice as an ingredient, or other effective methods. Lettuce was measured at 48°F. Cool all cut vegetables in the freezer until service. Discussed disposal of remaining lettuce after service.
