   • 6-501.111(A)(B)(D)FliesControlling Pests - Premises maintained free of insects, rodents, and other pests — --Observation: Lots of flies seen in the kitchen area as well as a couple of wasps.
   • 3-501.16(A)(2)Time/Temperature Control for Safety Food, Hot and Cold Holding - Cold Holding — --Observation: TCS food shall be maintained at 41°F or below, except during preparation, cooking, cooling, or when time is used as a public health control. Walk in cooler ambient temperature 44-45 degrees. Unit was adjusted and down in temperature by end of inspection.
   • 4-602.13Nonfood-Contact Surfaces — --Observation: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. There is grease built up around the fryer and behind the grill and fryer. The door handles and doors of the freezers and coolers have sticky residue to be wiped as do the light switches. The freezers that have not yet been defrosted need to be defrosted and cleaned. The ceiling of the walk in cooler has a white fuzzy buildup.
   • 6-201.11Floors, Walls, and Ceilings - Cleanability — --Observation: Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. The ceiling is in the kitchen above the prep area and in the storage area is peeling in spots.
