Observed salsas that were held past the discard date indicated on the date marking. Ensure ready-to-eat, TCS food is discarded when the date mark exceeds the required time/temperature combination. PIC discarded the salsas.

    • 4.3(B)(1)Fixed equipment installation - Spacing or Sealing — Fixed equipment was not properly installed. Observed the mop sink and three compartment sink is not sealed to adjoining walls. Ensure equipment that is exposed to spillage and seepage is sealed to adjoining walls.
